  • ½ cup butter, softened
  • ½ cup powdered Erythritol
  • 8oz. cream cheese
  • 8 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • 1 teaspoon powdered lemon zest or lemon extract
  • 2 ½ cups almond flour


  • ¼ cup heavy cream
  • 3 tablespoons powdered Erythritol
  • ½ teaspoon vanilla extract




    • 1Preheat oven to 350F.
    • 2Line pound cake pan or loaf pan with baking paper and grease with some butter.
    • 3Cream butter in a bowl with Erythritol.
    • 4Add cream cheese and beat until smooth.
    • 5Add vanilla, eggs, and lemon powder or lemon extract. Beat until smooth.
    • 6Fold in almond flour and baking powder.
    • 7Stir until smooth.


    • 8Pour the batter into prepared baking dish. Bake the cake for 50 minutes or until inserted toothpick comes out clean.
    • 9Make the icing; combine the icing ingredients in a small bowl.


  • 10Cool the cake on a wire rack. Remove from the pan and spoon over the glaze once the cake is completely cold.
  • 11Serve.
