Classic Cobb salad is definitely a keto-friendly favorite thanks to its low-carb and high-fat ingredients such as lettuce, hard-boiled eggs, chicken, bacon, avocado, Roquefort cheese (or blue cheese), tomatoes, and red wine vinaigrette. We love Cobb salad because it’s hearty and filling. The flavors also add to its appeal. But to make it even keto friendlier, here’s our take on classic Cobb.

Dressing:

  • 4 tbsp mayonnaise
  • 1 tbsp chopped chives
  • 1 tbsp yogurt
  • Salt and pepper, to taste

Salad:

  • 2 hard boiled eggs, quartered
  • 3oz. bacon, cooked and crumbled
  • 8oz. rotisserie chicken, sliced
  • 1 avocado, peeled, pitted, chopped
  • 4 grape tomatoes, sliced
  • 5oz. lettuce
  • Salt and pepper, to taste

  • 1Combine the dressing ingredients in a bowl, stir to combine, and place aside.
  • 2Add shredded lettuce to a bowl.
  • 3Top with hard boiled eggs and tomatoes and season to taste with salt and pepper.
  • 4Add in the chicken and bacon.
  • 5Drizzle with the dressing and serve.

About Cobb Salad

According to The Kitchen Project website, Cobb salad was created in 1937 at the Brown Derby Restaurant in Hollywood. The official story is that one midnight Bob Cobb, then owner of the Brown Derby, was looking for a snack and made the salad. Sid Grauman from Grauman’s Chinese Theater who was with Cobb that night asked for a “Cobb salad” the next day, and the salad became a Derby sensation soon enough.
