  • 4lb. pork leg, bone removed
  • 4 cloves garlic, halved
  • 1 onion, sliced
  • 6 button mushrooms, quartered
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon coriander seeds, crushed
  • 2 teaspoons salt
  • Freshly ground mixed pepper (red, black, green, white)



  • 1Preheat oven to 430F.
  • 2Season pork with salt.
  • 3Line roasting tray with parchment paper (optional).
  • 4Toss the mushrooms, onion, garlic, and half the coriander onto roasting tray.
  • 5Roll and tie the pork leg with a kitchen twine.
  • 6Place the pork on top of the mushrooms and onions.
  • 7Make cuts on the surface of the pork skin.
  • 8Brush the pork with olive oil.
  • 9Sprinkle the pork with remaining coriander seeds, rosemary, and freshly ground black pepper.
  • 10Place the pork into the oven to 40 minutes.
  • 11Reduce heat to 355F and continue to roast for 1 ½ hours.
  • 12Let the pork rest for 10 minutes before slicing and serving.


Preparation Tips

Pre-cooking the pork meat for 40 minutes exposes it to high temperature and makes the skin crispy. We’re using olive oil for this recipe since it’s a good form of fat and it also imparts a distinct flavor that anyone will appreciate. While leaving the pork to rest for 10 minutes prior to serving, you can make keto gravy out of the drippings from the roast, egg yolks, chopped onion, and butter. An alternative seasoning to salt would be greek seasoning. This gives your pork roast a mediterranean flavor.
